It’s an important day for the boyfriend, for he has to be up at 5:30 a.m. and out of the house in an half hour. Since, he wakes me up with him, its best to make use of the time by making a quick breakfast.

Think breakfast can be prepared and cooked in less than 10 minutes? It can be done. He was sitting at the table thankfully eating a healthier breakfast than the bodegas around the corner. I was back to sleep as he was walking out the door.

The 10 Minute Breakfast Sandwich

Turn oven to 400°F. Place 2 slices of bread, one slice topped with cheese, in the oven. Over medium-high heat, fry an egg in olive oil. Season it with salt and pepper. Spread lemon hummus onto the bread slice with no cheese. Add a tomato slice and drizzle with balsamic vinegar. Top with fried egg and lettuce. Cover sandwich with the melted cheese bread slice. Either serve sandwich on a plate or wrap it up to go.

    Simple and delicious with a very nice picture. I love hummus and I use a black bean and tahini hummus on my sandwiches as an alternative to mayo (which I hate) or miracle whip. Good job and make sure to get plenty of rest and liquids for that cold.
