and the living is, living is easy
Fish are, I know the fish are jumping
and cotton is so high
Your daddy is so, so rich and your mama good-
she had to be good-looking

Summertime and the Living is Easy Salad

Ingredients
1-14 oz. can kidney beans; rinsed and drained
1 cup corn; fresh or frozen, blanched
3 green onions; white part finely chopped and the green part, sliced
2 Italian peppers; roughly chopped
1 lb. mini or large heirloom tomatoes, depending on size, halved or quartered
1/2 cup pitted kalamata olives
1 carrot; grated
1/8 tsp. paprika
Salt and pepper; to taste
1/4 cup olive oil
Balsamic vinegar; a generous drizzle
1/2 cup fresh herbs; chopped (basil, oregano, parsley, and/or rosemary)
The juice of one lemon
1 cup feta cheese; roughly chopped
A pinch of crushed red pepper
1 cup zucchini; roughly chopped
Garnish: Wheat bread, boiled eggs and feta cheese

Directions
1. Gently toss all ingredients in a bowl.

2. Cut wheat bread lengthwise in half. Place salad on top. Garnish with quartered boiled eggs and crumbed/chopped feta cheese

3. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.

4. Enjoy eating healthy.

    I love this song:) Almost as much as this salad…wow what a great combination of flavors!
