Sunday: Classic meals for a snowy day
Buttermilk Pancakes with Caramelized pears and pecans. Topped with a slightly sweet vanilla whipped cream.
Chicken Stew made with rosemary and sage, instead of thyme. Made richer with a  little cream.

Wednesday/Thursday/Just in case quick meal:
Salmon with Spinach and Pea Salad with Pesto dressing

Friday: Christmas Dinner for Two
Roasted Young Chicken with Cornbread, Dried Apricot and Dried Fig Stuffing over Roasted Vegetables
Sauteed Swiss Chard
Sweet Potato Pie
Langhe Arneis 2008 · A floral, fruity white wine with a slight lingering mineral taste
« The Do Ahead Trick #1 » Made Cornbread for the stuffing on Saturday and placed it in the freezer.
« The Do Ahead Trick #2 » Bake sweet potato pie and place in the freezer. Defrost and serve at room temperature. I would’ve done it, but my freezer is full. Looking forward to baking on Christmas Eve.

Roast Paprika Chicken, Garbanzo Beans and Tomatoes over Couscous

Paprika is too overqualified as a garnish. It sits in the back of most spice racks behind the thyme, basil and rosemary. Blame it on the average grocery store’s fault for offering a pretty spice with no substance.

Granny’s Sweet Potato Pie

Sweet Potato Pie

There are many Sweet Potato Pie recipes using corn syrup. I don’t remember my grandmother and father using that super sweetener. However, I remember plenty of brown sugar. I made this for our Christmas dessert this year, and I understood I had big shoes to fill. Apparently, the boyfriend’s mother makes the best Sweet Potato Pie. I called on my dream team, the Dad and the Granny, to help me with this recipe. Even when I forgot a couple ingredients after I placed the pies in the oven, I called my Granny for reinforcements. Thank goodness she saved the day, and it was great talking with her as the pies were baking in the oven. Of course, I would never ask the boyfriend who does  it better. I tell myself, I must stay humble. Oh, humble pie, I sweet you.
