There’s nothing like a peppermint candy cane crushed into tiny pieces with its crisp flavor cutting through a decadent, dark and vanilla white chocolate brownie. The flavors sing, “Have a jolly Merry Christmas!”
During this festive time of the year, Christmas songs are at their full volume as I sing along in a non-harmonic voice while baking and cooking. Reflecting holidays of past years, white chocolate flavored with vanilla goes on top of dark chocolate brownie batter while singing along to The Temptations’ “Let It Snow.” With the help of Mariah Carey’s “All I Want for Christmas is You,” I drizzle a rich chocolate ganache over dark and white chocolate brownies. I hum along to Mahalia Jackson’s “Joy to the World” as I sprinkle crushed candy cane over the brownies.
Like me, you may be singing unabashedly, but if you’re feeling a little guilty about this sweet treat, don’t. Coconut oil and sugar are used instead of butter and white sugar. Although these brownies have healthier alternative ingredients, they’re well-deserved, especially if you have a generous bowl of a healthy Citrus Orzo and Smoked Salmon Salad first (ideally right when Vince Guaraldi Trio’s “O Tannenbaum” ends).
This is one of my favorite times of the year, because ’tis the season to sing along and be joyfully loud and merrily happy.
