This economy is real to me. Like most people in 2008, I was laid off. Coincidentally, I received a part-time job. Receiving a part-time job during that time period was extremely lucky, but it also meant several of my bills went unpaid for two years into now. Then last November; I was let go from the part-time job. Unemployment covers the rent and utilities. There’s a little left for food and limited transportation. Each week, I’m down to a few dollars before receiving unemployment benefit. Between the financial instability, I’ve dealt with a few emotional blows. A few months ago, a representative from Chobani contacted My Life Runs On Food about the amount of yogurt in my recipes. She enjoyed reading about the Orange Cornbread with Greek Yogurt and Blackberry Sauce and offered to ship a large box of any of their 11 flavors. Until her email was read, I was unaware of the amount of yogurt in my recipes. It’s not an ingredient associated with childhood memories. Today, a large container of 2% or whole milk, unsweetened yogurt is in my refrigerator. The unsweetened and plain flavor provides versatility for spontaneous cooking. It’s used in salad dressings, as a simple topping for Mexican-inspired dishes, and biscuits. In my favorite breakfast cereal of late, unsweetened yogurt is mixed with cream honey, chopped pears, granola, and toast pecans. Greek yogurt has unknowingly become a pantry staple. It was missed, especially after the first big and surprise blizzard of the season. Afterwards, I learned to maintain a full pantry of the basics: Flour, butter, dark maple syrup, eggs, both cow and almond milk, vanilla, and bittersweet chocolate. It’s not fun to wake up after a snowstorm to an empty refrigerator. It’s realized, most stores in New York open regardless of the weather, but who wants to walk through snow in the mornings? This is seriously a quickie dessert. Simple to make. A bit boozy. It’s bananas. It was made for a friend’s party at the last minute. We were planning to bring banana bread, but there was a missing ingredient. Promptly scanning the cookbooks, I decide to make brownies. Luckily, all of the ingredients for making this chocolate dessert are in the pantry, but it can’t just be a brownie recipe. This dish has to be special. Overripe bananas are still available to use. There’s a little rum in the refrigerator. Is it possible to make Brownies with rum and bananas? Sure, let’s try. If the recipe fails, we’ll stop by a wine store en route to the party. Read more
