There are few memories of my first trip to Birmingham, Alabama: Joking uncles, watching Spike Lee movies until sunrise with our cousins and eating sugary cantaloupe. The morning we left Birmingham, it was sweltering hot. My uncle joked about the sweat on my nose being a sign of evil. Being too young and believing every comment, I wiped the sweat off. As the final suitcase was packed into the back of Dad’s truck, our Great Aunt handed us a large container of sliced cantaloupe to enjoy on the long drive back to Virginia. My sister and I were overjoyed about eating more cantaloupe. A few hours later, Mom unsealed the container of cantaloupe slices. The first bite was a salty surprise. We’ve never had cantaloupe with salt, and we didn’t like it. Well, Mom and Dad thought the better of the situation, because it was more for them. My sister and I watched our parents gorge on our sweet cantaloupe ruined with salt.
Gojee.com is having a potluck party. My dish is simple: Crackers and cheese. That’s it. It’s best to keep it simple, instead of introducing a complex dish. Of course, everyone’s dish is going to be superbly unique. It’s not a competition, but it’s necessary to try my best. After all, we drool and glaze at each other photographs. This time, we’re tasting the creation.
My idea starts with a simple recipe: Crackers. They literally take 30 minutes from prep to serving. That’s the same amount of time it takes to buy crackers at a store. These aren’t basic flour and butter crackers, for they’re “whatever’s in my pantry” flavor. I started by adding lemon to the basic recipe. Then I changed the recipe to include cornmeal and chili spices. Lastly, rosemary and wheat are classically paired together. I’m proud of my quick creation. When the Peanut Butter & Co. first approached MyLifeRunsOnFood.com about developing recipes, my initial inspiration were cuisines from Africa, Asia, Caribbean, and Latin America. They all have a common vegetable in common: yuca. In addition, most of these cultures frequently use peanuts in their recipes. For this recipe, instead of frying yuca, I baked them instead. Then, two peanut butter dipping sauces were created. The sweeter Pineapple Peanut Butter sauce is made with “The Bee’s Knees” flavor and the spicy Tomato Peanut Butter sauce is made with “The Heat is On” flavor.
