These past couple of years, a few food blogger friends and I, contributed recipes to KwanzaaCulinarians.com. This would’ve been our third year, but I needed to rest. I regret that we failed our fans in this decision, but this is a better solution for me. The quince apple was hard. Immediately letting me know this isn’t a fruit to eat while running out the door to work or as a midday snack. It needed to be cooked down with a roast chicken, in a cobbler, pie or an apple skillet pancake. It had a beautiful floral and fruity fragrance, a scent that took my memory to perfumes and candles using quince in their blends. It’s the various spices that define holiday baking with cinnamon being the most common of them all. Next to beautifully adored butter cookies, simple snickerdoodles rolled in cinnamon and sugar are one of my favorite cookies because of its soft and chewy texture. In this recipe, coconut sugar replaces white sugar for a less sweetened and a hint of caramel flavor. While white-whole wheat flour is tossed with all-purpose white flour for a slightly healthier treat. The other change? Cardamon replaces cinnamon for a different sweet and spicy flavor. Along with cinnamon, it’s a spice redefining the holidays among adventurous bakers.
Over Thanksgiving weekend, I ate four slices of my dad’s German Chocolate Cake, half of his sweet potato pie, one slice of my aunt’s famous buttery two-layer vanilla cake with chocolate frosting, and another piece of celebration vanilla cake. Of course, those were just the desserts. The following Monday, I was in the gym running, lifting weights, and stretching my body into redemption. There’s the traditional reason for this type of gluttonous eating during this time of year: The body needs the extra fat to keep warm during the colder months.
