A whole pineapple was thoughtlessly purchased without a clue of what to do with it. Although, it’s a bit complicated to chop up, it’s a juicy snack or a nice garnish for a rum drink. Chunks of it always sweeten a mean, green stir-fry. When it’s pureed, it sweetens most dessert (try it in Hummingbird Cake with Mascarpone Frosting). After some thought, I decided to challenge myself by making a savory pineapple pizza.
The weather is cooler, but there’s still plenty of green vegetables everywhere, especially summer squash, arugula and basil. Fresh spinach fettuccine pasta (find it at an Italian store or use dry pasta) is tossed with shaved zucchini, basil pesto shrimp and baby arugula. A winter farmers market initially looks deserted, but it has plenty of unusual root vegetables and varieties of dark leafy greens. The apples and pears overflow their crates. Some markets, such as New York City, also serve goat cheese, yogurt, cured and cuts of meats, milk, honey, bread, eggs, grains, and dried beans. Heirloom carrots in purple and varieties of potatoes are visual reminders of whole food’s diversity.

From one Turkey Meatball recipe, two different meals were served, sans the classic tomato sauce. Recipe number one was Turkey Meatballs with Creamy Mushroom Sauce and Lemon Arugula Spaghetti. This is a versatile ingredient that will add instant flavor to other dishes, as well.
