Each time I receive a tea collection from The Republic of Tea, I’ve noticed how it’s an undercurrent reflection of my life. When the first shipment of arrived, I’ve just used the last green tea bag only to come home to a box of Green, Ginger Peach, and Orange Blossom teas outside my apartment door. The second shipment, Matcha Green Tea, arrived during March when fresh green blades of grass and tulips were fighting their way through the snow, and the weather was still brisk. When I brought a gym membership to return to working out, the next shipment included their Be Active tea collection. And, the arrival of their easy to make iced teas in the fifth shipment clearly reminded me Summer was around the corner. When Stress is too Much and Sleep is too Little

Kale and Friseé Salad, Seared Tuna, Croutons and Matcha Green Tea Vinaigrette

As this is being written, it’s almost 2 in the morning. There’s a major deadline at work. A major deadline at home. There was a major deadline missed on Monday. Taxes are due in April. And, I’m trying to maintain what’s left of my sanity. My body aches every time I wake up in the morning. It begs for a few days of sleep. Normally, when waking up in the morning, I reach for a bold cup of coffee to feebly add a little energy to my tired body. This time a generous cup of The Republic of Tea’s u·matcha Green Tea Latte (recipe here) is whisked into a foamy drink. Matcha is green tea leaves grinded into a fine powder, and it has more caffeine than whole tea leaves. The amount of caffeine doesn’t cause my nerves to become jittery like coffee. Instead, the matcha (as with most teas) steadily increases my energy in an unnoticeable calm manner. With a banana, whole wheat toast slathered with butter and marmalade, I calmly start the day to weave in and out of crowded subways to walk up numerous stairs that lead into work.  Read more

Ginger Peach Tea Mussels and Shrimp

A long time ago, friends highly recommended two dollar boxes filled with 30 bags of green tea. It was the trendy, recently discovered (in Western culture) ingredient. Everyone was talking about all its health benefits, such as weight loss, clear skin, detox and low cholesterol. It cures (fill in your health problem here). Back then, I drank a cup in the morning and another cup in the afternoon. Then, one day as I was strolling in the health food store, I picked up a nicely designed steel can of 50 green tea in unbleached bags (free of unnecessary tags, strings and staples). As a designer, I was immediately attracted to the packaging. The label had all the buzz words demonstrating good citizenry in the world: organic, The People’s Green Tea and social good activities. The first sip was refreshing. The second sip I threw the cheap green tea boxes away. The third sip, I wanted to learn more about tea inspired by The Republic of Tea.
