Cooking Light Magazine: Chicken Braised in Wine and Rosemary

Cooking Light Magazine: Chicken Braised in Wine and Rosemary

Guess what? I’m a Cooking Light Magazine’s Bloggers’ Connection member, and I get to review monthly recipes from their magazine twice a month. As I’m super excited, because the recipes chosen to appear on MyLifeRunsOnFood.com will be mostly quick and healthy. Waiting for my free monthly subscription to arrive, I browsed their recipes online to discover Chicken Braised in Wine and Rosemary from a previous issue. My adjustment to the recipe was throwing in several old, chopped apricots, fresh thyme and parsley. Instead of serving potatoes with this dish as the original recipe suggested, yellow cornmeal grits was used. Next time, I’m using roast baby potatoes. Read more

Summer in a Hot Kitchen… Not Me!

Zucchini Flower Quesadilla

Since making a full recovery, my weekends are super busy with events, and I barely have time to catch up on household chores, running errands… and this blog. A couple weeks ago, he started asking about breakfast (or brunch) being ready by casually mentioning the time he was returning home from the gym. The hints were well taken, and I realize our Saturday breakfast ritual was missed.

I’ve been meaning to make Ricotta Cheese Pancakes for a while, but my body won’t allow me to wake up early enough to make them. When the boyfriend dropped the hint of what time he was returning from the gym on Saturday morning as early as Thursday night, I made sure to purchase ricotta cheese for the weekend. Lucky for me, the time he was returning home still allowed a few extra hours of happy sleep.

Celebrating Ice Cream in July

Very Vanilla Cherry Pistachio and Chocolate Chip Ice Cream
In celebration of July being Ice Cream month, Nielson Massey delivered their Madagascar Pure Vanilla Extract to my doorstep. The representative shared a delicious coconut milk based ice cream, too. I’m looking forward to trying it one day. For now, I love a good ice cream with whole milk and cream. It’s still the best source for vitamin D and calcium. Of course, it’s loaded with sugar, but… let’s not have a nutritious scientific data talk. It’s summer. Temperatures are 95° and above. Icy desserts, such as a Very Vanilla Cherry Pistachio and Chocolate Chip Ice Cream should be savored (or devoured). Read more
