These days, my priority is to have fun outdoors to make up for being indoors during the summer solstice. I’m searching and creating recipes with prepping and cooking times totaling less than an hour. Relax, It’s Saturday Morning

Since I’ve returned to working from 9 to 5, Saturday is the only day of the week, in which I can sleep in without waking up to an alarm clock. Meanwhile, the boyfriend wakes up super early to train clients or box with friends. A couple weeks ago, he started asking about breakfast (or brunch) being ready by casually mentioning the time he was returning home from the gym. The hints were well taken, and I realize our Saturday breakfast ritual was missed.

I’ve been meaning to make Ricotta Cheese Pancakes for a while, but my body won’t allow me to wake up early enough to make them. When the boyfriend dropped the hint of what time he was returning from the gym on Saturday morning as early as Thursday night, I made sure to purchase ricotta cheese for the weekend. Lucky for me, the time he was returning home still allowed a few extra hours of happy sleep.

Celebrating Ice Cream in July

In celebration of July being Ice Cream month, Nielson Massey delivered their Madagascar Pure Vanilla Extract to my doorstep. The representative shared a delicious coconut milk based ice cream, too. I’m looking forward to trying it one day. For now, I love a good ice cream with whole milk and cream. It’s still the best source for vitamin D and calcium. Of course, it’s loaded with sugar, but… let’s not have a nutritious scientific data talk. It’s summer. Temperatures are 95° and above. Icy desserts, such as a Very Vanilla Cherry Pistachio and Chocolate Chip Ice Cream should be savored (or devoured). Read more

Beautifully Serene Lavender Fields

Strawberry Lavender Sorbet

After weeks of resting well and looking at the four corners of my apartment, a good friend suggested we drive two hours to Lavender by the Bay in East Marion, New York. They have a booth in Union Square’s farmer’s market selling lavender bunches, dried lavender for cooking, lavender sachets and more. After reassuring the boyfriend the trip is mostly sitting in a car, walking around the fields for less than an hour and driving another two hours back to the city, my friend and I  left Brooklyn one foggy, mild Thursday morning. We picked a weekday, because the crowds would’ve been too stressful for me (I’m not in the condition to stand in line). We also took a chance, because the weather stations predicted t-storms starting around 1 pm. We started our trip at 7:30 am, so we can return to the city before the heavy rains.  Read more

The doctor’s orders are to rest, take it easy and walk around just a little. My parents have firmly told me not to cook. The boyfriend brought strawberries. There’s fresh cream in the refrigerator. My girlfriend seriously asked me what are my plans tonight. I told her I was going to dance the night away and have a few drinks. I wish.
