Life pulls in various directions. And, it’s okay. We got this. I hope. The last few Saturday’s we have hosted friends and family in our apartment. Meanwhile, I apologize to my landlord about the weeds growing in the pots on the stoop (she laughed). In between hosting, traveling and new projects, my Saturday mornings are the only time to regain a few hours of extra sleep. Celery Root and Ricotta Cheese Frittata

For those of us who live in the Northeast and other wintry areas, the year started out delicious… and frigid as we were hit with a snowstorm. The subways ran local (slow), schools closed, and most area businesses shut down. In our house, we had enough food from New Year’s Day (we enjoyed eating this Black-Eyed Pea and Kale Salad with Chickpea Vinaigrette) to have a relaxing, do nothing-type of day, in which no one had to cook. Nutty Butternut Squash Pancakes With Baked Apples

Like its winter cousins, acorn squash and pumpkins, butternut squash are naturally sweet. They’re the dessert of the dinner table. Ricotta Pancakes served with The Republic of Tea's Summer Tea

Since I’ve returned to working from 9 to 5, Saturday is the only day of the week, in which I can sleep in without waking up to an alarm clock. Meanwhile, the boyfriend wakes up super early to train clients or box with friends. A couple weeks ago, he started asking about breakfast (or brunch) being ready by casually mentioning the time he was returning home from the gym. The hints were well taken, and I realize our Saturday breakfast ritual was missed.

I’ve been meaning to make Ricotta Cheese Pancakes for a while, but my body won’t allow me to wake up early enough to make them. When the boyfriend dropped the hint of what time he was returning from the gym on Saturday morning as early as Thursday night, I made sure to purchase ricotta cheese for the weekend. Lucky for me, the time he was returning home still allowed a few extra hours of happy sleep.

"Order Up" at Calle Ocho, NYC

A couple weeks ago, Calle Ocho, an Upper West side New York City restaurant, organized a tasting for New York City food bloggers. I’m still dreaming about the Bacon Wrapped Almond Stuffed Dates. The Cured Salmon, Aji Amarillo, Sour Orange and Pineapple ceviche lingers in my mind. Their Colombian Sweet Corn Arepa reminds me of an airy version of my Grandmother’s hot-water corn cakes. Read more
